After several years cooking fine dinning and living in scandinavia for some years my mind was changed.. so, I decided to go back to roots and create "The Real Oaxaca Cooking Experience" at Quinta Brava, this project tries to recover and pass the knowledge and the heritage from the real ancient Oaxaca cuisine and the magic with it, also, to show you the ancient methods and utensils that our older relatives used to use, we will cook a nice bunch of recipes form all over Oaxaca in a old fashioned wood stove called "Lorena" cause the way how is been constructed ( in Spanish "lodo y arena" in English "mud and sand") and you will be the main chef of this culinary experince, you will cook everything with your hands

Get to know several places of interest in a single tour. First we visit the legendary tule tree, then we visit a rug workshop in Teotitlán del Valle. To then go to the archaeological ruins of Mitla, the petrified waterfalls of hierve el agua and finally a mezcal distillery. Monday and Tuesday we do not visit Mitla because it is closed.

We’ll end our journey with a meal in a family-run market restaurant, sampling several different types of the city’s most famous creations, mole,a dish that much like Oaxaca’s rich culinary heritage itself, is the result of numerous ingredients being lovingly and carefully mixed together.

Departing from Santa María Huatulco, you can watch newborn turtles journey to the sea in a turtle sanctuary before witnessing the wonder of bioluminescent plankton in the Manialtepec lagoon.
